Peanut Butter Cookies
Peanut butter cookies are my go-to baking treat to make and to give to loved ones. They are simple but classic - and seriously, who doesn’t love peanut butter?! Over the years, I’ve been consistently using this recipe without fail. I’ve also experimented with adding walnuts and chocolate chips to the cookies (both in the dough, and sprinkled on top!) Yum!
Ingredients: (yields approximately 48 cookies)
3 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 cup unsalted butter, softened
1 and 1/2 cup brown sugar
1/2 cup granulated sugar
1 and 1/2 cup creamy peanut butter
2 large eggs @ room temperature
2 tsp. vanilla extract
Instructions:
Preheat oven to 350°F and line cookie sheets with aluminum foil. If you are using a silicone mat, dust the mat lightly with flour.
Sift and whisk together flour, baking soda, and salt in a large bowl; set aside.
Using a stand mixer (or hand mixer), cream together softened unsalted butter with brown sugar. Slowly add in granulated sugar and cream.
Add peanut butter to the creamed butter and sugar and mix evenly.
Add in eggs and vanilla extract (optional: I like to add a few drops of almond extract!)
Slowly combine in dry ingredients; mix until just combined. Do not over mix!
Use a spoon to help scoop out dough. Roll dough into balls (about an inch in diameter); place onto cookie sheet and use fork to make criss-cross pattern.
Bake for 10-12 minutes and let cool.
*Cookies can be stored in an airtight container for up to 5 days. But I guarantee these will all be eaten way before then!
